4.1.4 Hygienic requirements

Hygienic requirements are requirements related to food quality, composition and safety. These requirements are usually based on hygienic and good manufacturing practices (GMPs), recognised methods of analysis and sampling. These requirements may be applied on the final product or on the production processes.
 
Hygienic requirements typically include:

  • Microbiological criteria of the final product;
  • Hygienic practices during production; and
  • Other hygienic requirements not elsewhere specified.
